Ibutiti is not a first time crush for us. This is the second year we buy Ibutiti and we love the family history and effort behind this lot. The estate has been managed by Mercy Murathe since 2017, after her husband sadly passed away. Ibutiti is not a “new” independent estate. The mill was built in the 80’s, and they been processing their coffee separately since then. We saw Mercy earlier in March, and since taking charge of the farm, she has also started a dairy business that goes hand in hand with coffee!

- Preparation: anaerobic natural |As soon as the coffee is received it gets sorted by floating and picking out the ripe cherries. Then dry it on african beds in sleeping bags to avoid negative weather effects and to speed up uniformal fermentation process for 16 days; one person is assigned per each individual bed to rotate the cherries every 15 minutes to ensure uniformity of drying.Unique process: prior cherries dried in sleeping bags on tables they undergo 72 hours anaerobic process in plastic bins without oxygen
